Ingredients
- 1 bunch Collard Greens
- 1 bunch Kale (any type)
- 2-3 T Ghee (or oil)
- 1/2 t Cumin Seed
- 1 T Coriander Powder
- 2 t Cumin Powder
- 1/2 inch Ginger (fresh and grated)
- 2 handfuls Coconut (grated and unsweetened, optional)
- Sea Salt (to taste)
- Black Pepper (to taste)

Instructions
- Wash and finely chop greens.
- Heat ghee or oil and add seeds. When seeds turn brown, reduce heat and add powders and ginger. Stir.
- Add greens 2 tablespoons at a time so greens do not burn, but you can maintain a medium heat. Stir well, cover and cook on high 3-5 minutes.
- Stir in salt, coconut optional. Cover and simmer on low for 5 more minutes or until tender. Serve and enjoy!
