  • 1 bunch collard greens
  • 1 bunch kale (any type)
  • 2-3 Tablespoons oil/ghee
  • 1/2 teaspoon cumin seeds
  • 1 Tablespoon coriander powder
  • 2 teaspoon cumin powder
  • 1/2 inch fresh grated ginger
  • 2 handfuls grated unsweetened coconut
  • Salt to taste
  • Black pepper to taste

Wash and finely chop greens. Heat oil/ghee and add seeds. When seeds turn brown reduce heat, add powders and ginger, stir, and add greens. Stir well, cover and cook on high 3-5 min. Add 2 Tablespoons at a time so greens do not burn, but you can maintain a medium heat. Stir in salt, coconut optional. Cover and simmer on low for 5 more minutes or until tender. Serve and enjoy!
