Sauteed Green Beans

  • 1 1/2 - 2 lbs. Fresh Organic Green Beans
  • 1/2 Leek Bulb, diced (optional)
  • 1 T Coriander powder
  • 2 t cumin powder
  • 1/2 t Turmeric powder
  • 3 T Ghee or Olive Oil
  • Black Pepper to taste
  • Sea Salt to taste

Optional:

  • 2 - 3 handfuls Dried Coconut
  • Dry Roasted Blanched Almonds
  • Squeeze of Lemon Juice
  • Pinch of Hing [aesotofida]
  • Crushed Chili Flake

Prep green beans by removing the ends and strings. Keep long or cut in half once. In a large non-stick skillet, heat oil or ghee. Add powdered spices, roast in oil until fragrant and browned. Add leek and saute in spices until becomes aromatic. Add green beans and stir into spices until thoroughly coated. Turn heat to high, add small amounts of water to keep bean from burning. Cover and cook on med-high heat, stirring and adding small amounts of water, every 2 - 3 minutes for about 15 minutes. When beans are tender, add salt and pepper and any other additional ingredients (like coconut or almonds). Taste for salt and add if necessary. Enjoy!
