4 - 6 servings
- 2 cups organic, whole milk Yogurt
- 1/4 cup chopped, fresh Cilantro
- 1 cup peeled, seeded, grated Cucumber
- squeeze of Lemon Juice
- 1 tsp Raw Sugar
- pink Salt to taste
- black Pepper to taste
- 1 tsp dry-roasted, ground Cumin Seeds
- 1/4 tsp grated Ginger
Dry-Roasted Ground Cumin Seeds
Place uncooked seeds in a non-stick skillet on med-high heat.
Stir constantly in pan until seeds are dark brown and aromatic. Do not let seeds burn.
When cool, grind roasted seeds by using a mortar and pestle or spice grinder of any kind.
If a thinner raita is preferred, add water until desired consistency is achieved.
