Almond Cookies

  • 1 cup Raw, Organic Almonds
  • 1/4 cup Organic, Grade B Maple Syrup
  • 1/8 - 1/4 tsp. freshly Ground Cardamom
  • 2 tsp. Water

Optional:

  • Dried fruits such as raisins, apricots, prunes, mango, papaya, or any other favorites
  • Shredded Coconut
  • Seeds and Nuts

Pre-heat oven to 300 degrees F. Finely grind the almonds in a food processor (or blender). Mix remaining ingredients into almonds. Drop the batter in 1/2 tsp. patties onto well-oiled cookie sheet(s). They will spread a bit. Bake for 15 - 20 minutes or until lightly golden brown. Let them cool for just a couple minutes, then remove with a spatula to cool on a plate or wooden board.

This dish is a great beginning point for many variations. You can any mix of dried fruits, spices, seeds, nuts, or anything else you think might taste good.
